Spain's wealth of indigenous grape varieties and centuries of unique winemaking traditions make the Spanish wine landscape a fascinating region to explore. At this tasting, we explored the high-quality sparkling wines of the Penedes, the refreshing wines of Txakolina meant to be poured into the glass from several feet above, and a wine from a mind-bending Canary Island vineyard where individual vines are planted in volcanic pits to protect them from the wind.

As vines age on a well-suited terroir, the fruit they produce becomes different with age. As the roots dig down to source nutrients at lower depths, the grapes often become more complex and nuanced, as the vines slowly begin to produce less fruit. This combination of intense and concentrated fruit with the nuances of deep-root nutrients can create incredible wine experiences.

Tasting Recap! Wines of Jura

It's true that yeast is a part of every wine's genesis. But in France's Jura wine region, east of Burgundy, yeast plays an extra special part. Here, the white wines are often aged under a blanket of flower-like yeast (called voile, similar to flor) that forms a veil over the surface of the wine. This allows the wine to slowly oxidize and helps complex flavors and aromas develop. The white wines of Jura exist on a spectrum from heavily voile-induced to completely lacking voile. Let's try a few examples of these different styles! 

It's also interesting to consider that Louis Pasteur is from Jura. Would he have been interested in microbiology if he hadn't been so viscerally exposed to flor in Jura wine? We can wonder...

Manouzakis 'Nostos' ~ Crete
Vidiano
Vidiano was almost lost until Cretan winemakers began to recently champion this indigenous grape. Today, most producers make a single-variety Vidiano. 

Gavala 'Natural Ferment' ~ Santorini Island
Assyrtiko
Gavala's natural-yeast ferment of Assyrtiko comes from the wind-swept, basket-trained vines on Santorini Island.
